Recipe: Char-Grilled Buffalo Wings with Sweet Caramelized Onions

I had these wings at Anthony’s Coal Fired Pizza and loved the idea of buffalo wings that were delicious, and not fried.  Don’t get me wrong, I love traditional buffalo wings, but a healthier version that tastes just as good, that works for me.  The caramelized onions are a nice touch adding a bit of sweetness.  Kids gave this 2 thumbs up across the board. Make sure not to burn the onions and grill the wings dry to get a better char, then drizzle with olive oil.

Serves 4 – 5

What You’ll Need

chicken wings, 2 pounds,

oregano, 1 tablespoon dried, 2 tablespoons fresh

thyme, 1 tablespoon dried, 2 tablespoons fresh

rosemary, 1 tablespoon dried, 2 tablespoons fresh

olive oil, extra virgin, 1-2 tablespoons

sea salt and pepper to taste

Caramelized Onions

onions, 3 large, vidalia or yellow

olive oil, extra virgin, 1-2 tablespoons

balsamic vinegar, 1 tablespoon (optional)

sea salt to taste

To Prepare

1. Place wings in a bowl. Chop fresh herbs, mix chicken and herbs and let marinate for anywhere from 30 minutes to 1 day.

2. Place large saute pan over low heat and drizzle with olive oil (I use stainless steel because you get a better browning effect). Chop onions into slivers and place in warm pan, tossing often.  Scrape bits off the bottom and let cook for 30 to 45 minutes or up to 60 minutes, until soft and browned.  Turn heat down if getting too dark.  You want to cook the water out of the onions then the sugars in them will caramelize. Do not let them burn. When done drizzle with balsamic vinegar, cook 5 minutes more while, scraping the bottom often, remove from heat.

3. Turn grill on medium high.  Place wings on grill and cook for 7-8 minutes, or until they develop a crust.  Turn and cook 7-8 more minutes, turning when starting to  char.  Cook for a total of 20 minutes, or until cooked through and well charred. Remove from heat, toss with olive salt and pepper, garnish with fresh herbs and serve.

4, Serve chicken with caramelized onions on top and sprinkle with fresh herbs and olive oil. Bon Appetit
