20 years ago I had a seafood dish on the island of Santorini, Greece. It was fresh shellfish simmered in tomato sauce spooned over pasta. It was the best I've ever had. I learned that by adding a tablespoon of honey and a teaspoon of cinnamon to my tomato sauce, I could reproduce the aromatic sweetness of this dish at home. Try it.
